Meal Prep Shredded Chicken
With just 5 minutes of prep time and a slow cooker you will have enough cooked chicken for a recipe or two or a week of lunches! You can make so many different things with this seasoned and versatile chicken! Protein and rice bowls, chicken pot pie, chicken salad and more!
2-3lbs boneless skinless chicken breasts or thighs
½ cup of broth (chicken or veggie)
1 teaspoon onion salt
1 teaspoon multi-purpose seasoning such as Trader Joes 21 Seasoning Salute or Italian seasoning
¼ teaspoon black pepper
Place chicken in 4-6 quart slow cooker. Pour in broth and sprinkle with seasonings.
Cover and cook on low for 6-7 hours or high for 3 hours, until chicken is cooked through (165F degree minimum)
Remove chicken to a cutting board and shred with two forks or cut up with a knife.
Serve as desired or cool slightly before refrigerating.
