If you're anything like me you want easy prep and easy clean up meals that are yummy and healthy!
We love this recipe for just that!
Gluten Free and Dairy Free
Try it with veggies, on a salad, in a sandwich, in a rice bowl, the options are seriously endless and my whole family loves it ( that is a HUGE win) and it is on our menu on repeat!
3 lbs boneless skinless chicken tenderloins or chicken breasts ( We love Whole Foods 365 Brand Organic Chicken)
⅓ cup apple cider vinegar
2 tbsp dijon mustard
1 tsp honey
1 tbsp salt
1 tsp pepper
5 cloves minced garlic
Optional additional seasonings:
1 tsp dried oregano
1 tsp dried basil
(Add both above for a Greek chicken flavor!)
1 tsp Trader Joe's 21 Seasoning Salute
Mix all marinade ingredients together with a fork or whisk. (I measure and mix it all in a glass measuring cup)
Add chicken to a gallon size plastic bag. Add marinade to bag. Seal the bag tight and mix all together. Let sit in the fridge for at least 1-2 hours, optimally 5-6 hours. I usually make it while I am making lunch and have stuff out in the kitchen anyway.
Cook on medium heat on a grill or grill pan. About 5 minutes on each side depending on the thickness of chicken.
