Greek Chickpea Salad

I LOVE a cold salad in the summer! Especially when I can prep it ahead of time and it is quick and easy. This Greek Chickpea Salad is also versatile so you could add chicken or tuna, sub red onion for green onion and it is still awesome. My favorite place to eat this is the beach with my toes in the sand!



Ingredients:


1 can chickpeas, drained + rinsed

3 mini English Cucumbers, chopped

1 Roma tomato, chopped

3 green onions, chopped

3 tablespoons fresh parsley, chopped

1/3 cup crumbled feta


Add all above ingredients to a bowl.


Dressing:

1/4 cup extra virgin olive oil

2 tablespoons fresh lemon juice

1 1/2 teaspoons minced garlic

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

Salt and Pepper to taste


Whisk all dressing ingredients together and toss with salad.

Refrigerate for 1 hour prior to serving

Lasts for 2-3 days in the fridge!
